Fried Green Tomatoes
4 Firm green tomatoes
1/2 cup cornmeal
1/2 cup flour
2 eggs, beaten
secret salt (to taste)
OIL for frying
In a shallow bowl beat eggs.
Mix cornmeal & flour & some secret salt.
Dip tomatoes in eggs then dredge in flour mixture.
In a heavy skillet, on medium burner, heat oil.
Fry coated tomatoes about 2 minutes on each side until golden brown.
Remove & drain on paper towels. Season with secret salt.
Serve HOT!
I like to drizzle on Red Bell Pepper sauce
and sprinkle with crumbled blue cheese. feel free to experiment 🙂
