Roasted Red Bell Pepper Sauce
3 Roasted Red Peppers
(or one 7-ounce jar, drained well)
4 garlic cloves
1 teaspoon balsamic vinegar
generous pinch of cayenne pepper
(or big dash of your favorite hot sauce
I use THIS piri piri sauce
1 tablespoon of light cream (1/2 & 1/2 would work)
2 tablespoons of mayonnaise
Finely chop garlic in food processor. Add red peppers, vinegar & cayenne; puree.
Transfer to Bowl. Whisk in mayo. Season with salt & pepper. I use my “secret salt”
Cover & chill (the sauce!) ……..can be prepared a day ahead!
