Fried Green Tomatoes

Fried Green Tomatoes

4 Firm green tomatoes
1/2 cup cornmeal
1/2 cup flour
2 eggs, beaten
secret salt (to taste)
OIL for frying

In a shallow bowl beat eggs.
Mix cornmeal & flour & some secret salt.
Dip tomatoes in eggs then dredge in flour mixture.
In a heavy skillet, on medium burner, heat oil.
Fry coated tomatoes about 2 minutes on each side until golden brown.
Remove & drain on paper towels. Season with secret salt.
Serve HOT!

I like to drizzle on Red Bell Pepper sauce

and sprinkle with crumbled blue cheese.  feel free to experiment 🙂

Roasted Red Bell Pepper Sauce

Roasted Red Bell Pepper Sauce

3 Roasted Red Peppers
   (or one 7-ounce jar, drained well)
4 garlic cloves

1 teaspoon balsamic vinegar
generous pinch of cayenne pepper
   (or big dash of your favorite hot sauce
     I use THIS piri piri sauce

1 tablespoon of light cream (1/2 & 1/2 would work)
 2 tablespoons of mayonnaise

Finely chop garlic in food processor.  Add red peppers, vinegar & cayenne; puree.
Transfer to Bowl. Whisk in mayo.  Season with salt & pepper. I use my “secret salt”

Cover & chill (the sauce!) ……..can be prepared a day ahead!

it was BUSY but not packed.
I was told it was SUPER busy at the opening –
one reason I waited until later.
I actually got some GREAT information from
PA Career link regarding training/school grants.

Tuesday 10/4/11 Dunkin’ Donuts coffee pods, "meatballs rd", Toastmasters

sister Pat bought me the Dunkin’ Donuts K-cups to try.
I did like them but prefer donut shop pods made by
“coffee people”…..

one really nice thing about being home is i can make
a hot breakfast if I want. I am expert scrambled
egg maker. It took years of practice.

 Wine du jour – AFTER Toastmasters —
I’m thinking I may need it BEFORE Toastmasters!!!

 I always label my wines so I remember when/where
I got it. My wine ALWAYS has a story….
I bought this bottle on Danny Diehl’s 25th birthday.
We went “down the shore” (Belmar, NJ) & ate
at the Rajin’ Cajun … one of our favorite restaurants.

The wine now holds 2 memories —
danny’s birthday & relaxing drink after Toastmasters…
And the picture preserves those memories…..

I was HOPING time would permit for us
to swing by & check it out

I found out the other day that MIKE DOOLEY was coming to Philadelphia
to do a book signing of his latest release:

Sunday 10/2/11 Biking from Tinicum Park

Today we were planning on doing the “volunteer ride” with our Bike Club.
Many of the members volunteer the day of the ride so they can’t ride
the day of the Covered Bridge Ride.  Plus we get to check the road
markings & make sure everything will be good for next week.
You still have time to register!!!

Our first stop was HERE to fuel up for the ride.
Our neighbor owns the store so we like supporting him
I never knew it was a Guatemalan Bakery!!
It’s a new sign – he recently bought the place.

We ended up bailing on the club ride & doing our own ride instead.
We hope to ride the 34 mile HILLY ride next week.
Today we rode 32 miles, not so hilly ride.

I was intrigued with their trash system….
yes, just cut a whole in the sink!!

REALLY happy about our decision to do
a different ride.

It was a CHILLY day & I wanted to toast up.
When we got home I lit our first fire for the season.
It was funny seeing Weasel getting weaseled…..
She was laying on the dog bed soaking up the
warmth of the fire & Chester nonchalantly came up
& laid on the dog bed between Weasel & the fire.
