Sunday 4/3/11 Helen’s breakfast specialty

We had this dish at a wine bar as a dinner appetizer &
i kind of fell in love with the combination – flavors/texture.
I often just “throw things together” then people ask me for
the recipe & I can’t provide it…..
The dish I made today was Eggs (over easy) with
caramelized shallots, peppadew peppers & chorizo.

gather up the ingredients

dice up some shallots

(i get mine at the Wegman’s antipasto bar)

– you saute the shallots, peppers & chorizo separately (b/c they all cook at different speeds)
then add them together when they are all cooked

i tried using this to make the eggs round –
it worked ok – i think next time i need to spray it
b/c it kind of was sticking

Chester skipped school today so we had
a training session in the Park instead.

We were out running errands & HUNGRY since
we didn’t eat breakfast – so we stopped
at MOE’s – it’s actually kind of “healthy”
Mexican fast food. I tried the fish taco
today & liked it.

Today we ordered our rug for the basement.
They still have to come out & give us a final
estimate before we commit but most likely
this is the rug we will be getting.
It has a pattern & is super comfy!

Since we were finishing the basement he was
inspired to finish the laundry room. YAY.
I’ve been asking for this for YEARS!!!!

I cut through our neighbors back yard —
on my way to the nail salon (close enough to walk).
they have a FARM back there —
i think they use the produce at their restaurant.

Heard the a cappella group BEELZEBUBS was
going to be performing at a local High School.
of course – i HAD to go……

the concert was held here.
One of the group members was a graduate
from here a couple years ago

guess I’m just LUCKY!!!!! like with my parking!

10 year olds — very excited star struck ones….

3/3/1/11 Movie "My Run" & good karmal

Went solo to see this movie – couldn’t  find a date –
of course that didn’t stop me from going &
doing something I wanted to do!!

The movie was about Terry Hitchcock, a 57 year old man
who ran 75 consecutive marathons in 75 consecutive days.

It was quite inspirational & makes you think —
if he could do something like this so could you….
He was HARDLY the model of health –
before, during or after the run…..

read about them & decided to try them.
VERY GOOD (for those who like caramels…)

AND as a bonus — they
 come wrapped in positive quotes 🙂

on my iPhone I use the foursquare app
that allows you to “check-in” places so
your friends can find you.
Instead of “checking in” at the Train Station
I’ve been checking in at the
“Rat Infested Subway” & today I used
this picture to show I was there…..

we got a shipment of produce delivered today so i concocted this dish.
I’ve made it before but it ALWAYS varies…..

this is sauteed pancetta –
i usually use Prosciutto but
i bought pancetta by accident – it works.
and i had a couple slices of slab bacon
in the fridge so i threw those in too

put the chicken broth in heavy pot

throw in a can of drained cannellini beans

today in our produce shipment we got Swiss chard –
so i threw that in & also a bunch of spinach
