We walked 2 miles but the dogs, no doubt,
did double that!!! The dogs were tuckered out!!

They both got baths when we got home & now they both smell like

(i was a couple days behind – never missed
|
i got a letter from a friend awhile ago & she decorated
the envelope – she’s quite artistic….. so i recycled
her art work on a letter I was sending —
wonder who is getting Fan Mail from helcha?

ran some errands with sister Pat today.
Illg’s market was one of our stops.
|
|
it was a small market & everyone was friendly & helpful.
Their specialty is meats but they have lots of other
farm fresh products as well.
|
|
MEATS!! Their selection was plentiful.
No doubt we’ll go back & visit.
It’s not too far from our house – maybe 20 minutes.
|
|
we made a wrong turn & ended up on this road…
well, actually, it was someone’s driveway.
We liked how all the trees were symmetrically lined up

We found what we were looking for –
this park that has a dam.
I’m going to go back with the dogs –
maybe tomorrow?

our next stop was The Fresh Market —
we love this place —
they offer local & organic everything!!
Today they had a major food tasting –
every time we turned around there were samples.

Ichi Nichi, Issho: One Day, One Lifetime
ย “Ichi nichi” means “one day”; “issho” means “one lifetime.”ย
This expression tells us how we should live our daily lives.
Each day and every day, your life unfolds and evolves.
Slowly and surely, your life experiences builds up.
Each day is a “miniature” of the whole canvas of life.
ย There is also another way to think of “issho.”
Try to imagine that your whole life
would have to be summed up by one day.
You would try to have the best day possible,
and you would try to concentrate hard.
ย If you live this way on a daily basis,
if you gave one hundred percent of your effort every day,
then you will begin feel contented.
You will truly feel that each day is valuable
and that nothing is a waste of time.
This exercise can give you valuable insight into your life.
Everyone wants to be happier and to have a better life.
That’s the way we are.
But, we have to make a constant effort in order to live more fully.
Every day, make sure you are giving your best.
This is the only way to improve yourself and to feel that you are growing.
ย “Ichi Nichi, Issho” applies to every aspect of your life.
It is a very simple expression, but it is very, very important.
Guacamole with Charred Jalape??o and Scallions
- TOTAL TIME: 20 MIN
- SERVINGS: 2 cups
Ingredients
- 3 medium scallions, white and tender green parts only
- 2 medium garlic cloves, unpeeled
- 1 jalape??o, seeded and quartered lengthwise
- 1 tablespoon vegetable oil
- 3 Hass avocados, halved and pitted
- 1/4 cup finely chopped cilantro leaves
- 2 tablespoons fresh lime juice
- Salt and freshly ground pepper
Directions
- Preheat a grill pan. In a small bowl, toss the scallions, garlic and jalape??o with the vegetable oil. Grill over moderately high heat, turning occasionally, until charred all over, 5 to 6 minutes. Transfer to a work surface and let cool.
- Finely chop the scallions and jalape??o and transfer to a medium bowl. Peel the garlic cloves, mash them to a paste and add them to the bowl. Scoop the avocado flesh into the bowl and coarsely mash with a fork. Fold the cilantro and lime juice into the guacamole, season with salt and pepper and serve.
Make Ahead
Press a piece of plastic wrap directly onto the surface of the guacamole and refrigerate overnight.
Notes
Variation: For a brighter, crunchier guacamole, finely chop the scallions, garlic and jalape??o and stir them in raw.
Spinach Pasta Carbonara
-
- 1/2 pound lean slab bacon, cut into 1/2-inch dice
- 1 pound spinach fettuccine
- 1 cup freshly grated Parmigiano-Reggiano cheese (3 ounces)
- 1 large egg plus 2 large yolks
- 2 teaspoons coarsely ground pepper
- One 5-ounce container baby spinach
- Salt
Directions
- In a large, deep skillet, cook the bacon over moderately low heat until crisp, 7 minutes.
- In a large pot of boiling salted water, cook the fettuccine until almost al dente. Meanwhile, in a bowl, whisk the 1 cup of grated cheese with the egg, egg yolks and pepper. Carefully measure out 1 1/4 cups of the pasta cooking water and gradually whisk it into the egg mixture. Add the spinach to the fettuccine, then drain immediately.
- Reheat the bacon in the skillet. Off the heat, add the fettuccine and spinach. Slowly pour in the egg mixture, tossing constantly with tongs. Set the skillet over moderate heat for a few seconds to warm the sauce; do not boil. Season lightly with salt and serve at once.
